Sweet Potato Curry With Paneer

Ingredients

  1. 1 tbsp Farmaish oil

  2. 1 Onion, chopped

  3. 3 Garlic cloves, crushed

  4. 500 gms Sweet potato, peeled and cut into chunks

  5. 1 tsp Cumin powder

  6. 1 tsp Coriander powder

  7. ½ tsp Turmeric

  8. 1 tsp Paprika powder

  9. 1 tbsp Ginger, finely chopped

  10. 400 gms Tomatoes, chopped

  11. 100 ml Veg stalk (with no salt)

  12. 1 cup Peas

  13. 250 gms Paneer, cubed

  14. to taste Salt

Preparation

Step 1


Heat the Farmaish oil in a large frying pan and fry the onion and garlic gently for around 4-5 minutes until tender.



Step 2


Add the sweet potatoes and cook for 2 minutes then stir in all the spices and the and ginger, cook for around 30 seconds. Add the salt according to taste.



Step 3


Stir in the tomatoes and add a little bit of the stock. Bring to a boil, then reduce the heat and cook for around 15 minutes until the sweet potato is tender.



Step 4


Stir in the peas and cook for 3 minutes and then add the paneer. cook for another 2 minutes.


Step 5

Garnish with fresh coriander and serve hot.
